Spicy Pumpkin Chocolate Chip Muffins

These delicious muffins are sure to leave your house smelling great and your taste buds wanting more! They are a favourite recipe from my Mum which I have enjoyed with her many times accompanied by a lovely cup of tea…

File 18-08-15 11 51 42 am

1 and 3/4 cups flour

1 teaspoon all spice

1 teaspoon garam masala

1/4 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1 cup sugar

2 eggs

150 grams butter

1 cup cooked mashed pumpkin

1 cup chocolate chips

Mix flour, all spice, garam masala, baking powder, baking soda, salt and sugar in a bowl. In a separate bowl melt the butter; add beaten eggs and pumpkin to this. Fold butter mixture into dry ingredients then stir in chocolate chips. Fill greased muffin tray with mixture. Bake at 180 C for 20 minutes.

* If you double this recipe I don’t double the chocolate chips, 1 and 1/2 cups is ample.

*I have also used a gluten free flour mix instead of normal flour and they turn out well.

*Raisins make a nice substitute for chocolate chips.

Happy baking!
