Bounty Bites

Oh yum! Warning these Bounty Bites are deliciously more-ish!

 

Ingredients

Base:

1/2 cup almonds

1/2 cup walnuts

1 cup of dates (soaked for 15 minutes)

2 tbsp of coconut oil (not melted)

2 tbsp desiccated coconut

 

Filling:

1 and 1/2 cups desiccated coconut

3/4 cup tinned coconut milk

2 tbsp coconut oil (not melted)

 

Chocolate Layer:

1 block of raw chocolate

3 tbsp tinned coconut milk

 

Instructions:

Start by soaking the dates in hot water for around 15 minutes. Then combine dates, walnuts, almonds, coconut and coconut oil in a food processor. Wizz till everything is combined and has formed a sticky dough like consistency.

Next get out whatever mould you are going to use to create the Bounty Bites. I used two mini muffin trays for mine. Firmly press the base mixture into the bottom of the muffin trays.

Combine all the filling ingredients in a pot and warm it up. Do not cook, just warm so that the coconut oil melts.

Once the coconut oil has melted scoop the filling mixture out of the pot and press it on top of the base. Place the trays in the freezer for a couple of hours until it becomes firm.

Finally melt the raw chocolate with the coconut milk. Once it has melted let it cool slightly before spreading the chocolate on top of the filling in the muffin trays.

Place in the fridge for around 15 minutes until the chocolate is hard.

Carefully slide a knife around the edge of the bounty bites to remove from the trays.

Time to eat!
